Hubova polievka (Mushroom Soup)

In Slovakia, picking mushrooms is an extremely popular hobby. From the end of May until October, mushroom lovers throughout Slovakia enjoy this relaxing past time. The many different types of mushrooms that are picked are then used for adding to soups, sauces and dishes, always creating different flavours.

Here we present the sweet and sour taste of ‘Hubova Polievka’.

Ingredients:

  • 1/4kg of fresh mushrooms
  • 0.5kg of potatoes
  • 6x whole black peppers
  • 6x juniper berries
  • 0.5l of milk
  • 3 spoonfuls of flour
  • 1 spoonful of oil
  • salt, sugar and vinegar

You begin by washing the mushrooms and chopping them into fine pieces. Then, together with the black pepper and the juniper berries, you add the mushrooms to 3 liters of cold water.

You cook for approximately half an hour, until the mushrooms are tender. Just prior to them being cooked, add the oil together with some cubed potatoes.

Once the potatoes are cooked, thicken the soup with ‘zatrepka’ (which is a smooth mixture made from mixing the milk and flour together). Finally, bring to the boil and add salt, sugar and vinegar according to your taste, to achieve that sweet and sour flavor.

Sedliacka omeleta

Sedliacka omeleta (or Peasant’s omelette) can be served either as a starter or a light main course. A simple dish to make, which is nonetheless extremely tasty.

Ingredients:

  • 6 potatoes
  • 2 eggs
  • 1/2dcl of milk
  • 1 teaspoon of soya sauce
  • 1 teaspoon of salt
  • 1/2dcl of oil

Peel the potatoes, cut them into cubes and then boil them in the water. After they are tender, place them in the frying pan with the heated oil.

While the potatoes are frying, whisk the eggs together with the soya sauce and milk in a bowl. Then, once the potatoes are golden brown, pour the egg mixture over them, and continue to fry until the egg has been cooked to your satisfaction. Finally, serve it with a fresh salad.

Cesnakova polievka

Cesnakova polievka (garlic soup) is an extremely popular starter in Slovakia. This could be because the Slovak people believe in the healing properties of garlic. They feel that the garlic is good for the body as a whole and especially for the heart.

Ingredients:

  • 3x Stock cubes (2x meat and 1x vegetable)
  • 2 liters of water
  • 6-8 cloves of garlic
  • Diced bread
  • 0.5dcl of oil
  • Parsley for decoration

Begin by bringing a pot of water to the boil. Add the stock cubes into the water and cook for 10 minutes. Once the 10 minutes are up, press the cloves of garlic into the water and cook for a further 2 minutes.

Put the oil into the frying pan, heat it up and then add the diced bread. Fry the bread until it is crispy. Serve the soup into bowls, together with the fried bread, and a little bit of parsley for decoration.
